Tips and questions
Can I use agar-agar instead of gelatine?
Yes, for a vegetarian version: about 2 g of agar powder for this amount, boiled with the cream for 2 minutes. It sets firmer and faster.
Why didn’t it set?
The gelatine was not fully dissolved or the cream boiled hard after adding it. Stir it into hot, not boiling, cream and chill at least 4 hours.
How far ahead can I make it?
Up to 3 days ahead, covered in the fridge. Keep the berry sauce separate and add it when serving.
