Tips and questions
Why are my noodles mushy or stuck together?
They were soaked too long. Soak them in warm, not boiling, water until just pliable; they finish cooking in the wok.
Can I make it vegetarian?
Yes: leave out the prawns, double the tofu and use soy sauce or vegan fish sauce instead of fish sauce.
What can I use instead of tamarind?
Lime juice with a little extra sugar gives a similar sweet-sour balance, though less deep.
