Tips and questions
What can I use instead of gochugaru?
Mild chilli flakes mixed with a little sweet paprika come closest. Use less if your flakes are very hot.
How long does it keep?
It is best on the day. In the fridge it keeps 1 to 2 days but loses its crunch as the cucumber releases water.
What do I serve it with?
It is a typical banchan: serve it with rice and Korean barbecue, bulgogi or any grilled meat.
