Tips and questions
- How do I desalt salt cod?
- Soak thick loins in cold water in the fridge for 36–48 hours, changing the water 3 or 4 times. Or buy it already desalted.
- Can I make it ahead?
- Yes, it is even better the next day. Keep it 2–3 days in the fridge and reheat gently so the cod does not dry out.
