Tips and questions
- How do I make it less spicy?
- Remove the seeds from the dried chillies before soaking, or use mild ones such as Kashmiri chillies.
- Can I make the sambal in advance?
- Yes. The cooked paste keeps a week in the fridge or 3 months frozen; then the dish takes 10 minutes.
- Why fry the paste for so long?
- Until the oil separates, the raw shallot and chilli taste harsh. Patient frying makes it sweet and deep.
