Tips and questions
- How long does it keep?
- Up to 2 days covered in the fridge. Don’t leave it out at room temperature for long because of the mayonnaise and eggs.
- Can I freeze it?
- No. The mayonnaise splits and the potatoes turn grainy and watery when thawed.
- Why does my potato salad turn mushy?
- Overcooked potatoes or mixing them while hot. Cook them just until a knife goes in and let them cool completely before adding mayonnaise.
