Tips and questions
Which fish works best?
Firm white fish such as cod, hake, sea bream or grouper. Avoid thin fillets, which fall apart in the sauce.
Can I prepare it ahead?
Make the tomato and onion sauce up to 2 days before; add the fish and bake just before eating.
