Tips and questions
Where can I find anko?
Asian supermarkets sell it in tins or pouches. You can also make it by simmering azuki beans with sugar until thick.
How do I get an even golden colour?
Use low-medium heat and wipe the pan with only a trace of oil. Too much oil leaves spotty, uneven pancakes.
Can I use other fillings?
Yes, custard, whipped cream with matcha or chocolate spread are popular in Japan too.
