Tips and questions
How do I pick a ripe avocado?
It should yield slightly to gentle pressure near the stem; if it is soft all over it may be overripe.
Can I make it in advance?
Only the onion; cut the avocado at the last minute so it doesn’t brown.
What do Cubans eat it with?
With rice and black beans, roast pork (lechón) or ropa vieja.
